American Style Waffles and Pancakes

Ingredients
Jess from Miss Gray Souffle has shared her original recipe that can be used for either pancakes and waffles. It’s inspired by her trips to America and classic diner pancakes, perfect with lashing of maple syrup and stacks of bacon.
2 cups flour
1/4 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp good quality vanilla
2 large eggs
3/4 cup buttermilk
1/2 milk
30g melted butter
Method
1. In a large bowl mix all the dry ingredients until well combined
2. In a separate bowl whisk together eggs, buttermilk, milk and vanilla
3. Add to the dry ingredients and whisk to combine
4. Whisk melted butter into the thick batter
5. For pancakes cook 1/3 cup sized scoops of batter in a lightly greased fry-pan over medium heat. Ensure your pan doesn’t get too hot as these are thick pancakes and need time to cook through
6. For waffles cook for approximately 4 minutes on a medium heat setting. Always under-fill your waffle maker slightly as these do expand when cooking. A deep Belgium style waffle maker works best
7. Serve with Farmland Foods Streaky bacon and maple syrup
