BLT Pasta Bowls

Ingredients
- 400 g penne pasta
- 2 tbsp basil pesto
- 3 tbsp olive oil
- 250g Farmland Streaky Bacon
- 1 red onion diced
- 1 lettuce shredded (less if large)
- 150 g cherry tomatoes halved
- 1 avocado diced
Method
Cook the pasta in a large pot of boiling salted water according to packet instructions.
While the pasta is cooking mix the pesto and oil to form a dressing, add a little water if this is too thick.
Heat a non stick frying pan over a medium-high heat and cook the bacon until just crisp, remove from the heat and roughly chop.
Transfer the pasta to a large salad bowl, add the bacon, red onion and lettuce, drizzle with the dressing, season with salt and pepper and toss to combine.
Lastly add the tomatoes and avocado and very gently toss, taking care not to crush the avo.
Serve in shallow bowls.
