Ingredients
- 600 g chicken breasts (boneless, skin off) 1 breast per serve
- 125 g Farmland thin sliced streaky bacon
- ¾ C BBQ sauce
- 1 C grated pizza cheese
- 600 g agria potatoes peeled and chopped
- 4 tbsp butter
- ½ C milk
- 1½ C frozen peas
Method
Heat oven to 200°C
Season the chicken breasts with a tiny sprinkle of salt and pepper on both side and then wrap 2 slices of bacon around each.
Pour the BBQ sauce over the base of a baking dish that is large enough to take the chicken in a single layer.
Place the chicken over the sauce and sprinkle with grated cheese.
Place the baking dish in the oven and bake for about 25 minutes or until the chicken is fully cooked and the cheese has melted and turned golden.
At the same time In a large pot, place the potato chunks and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil, then reduce the heat to a simmer and cook the potatoes for about 15-20 minutes or until they are tender and easily pierced with a fork.
Drain the potatoes and return them to the pot.
Add the butter and milk to the potatoes and mash with a potato masher until smooth. Season the potatoes with salt and pepper to taste.
When potatoes are almost cooked, heat a small pot of water and cook the peas for a few minutes, drain well.
Serve the chicken with a mound of mash and peas alongside.
